Nutty Sweet Goodness Meal Prep
That is what I am going to call this amazing meal. The original name is actually Roasted Brussels Sprouts and Apples. Sounds a bit boring so I had to of course re-name this.
Ingredients:
1.7 lbs of brussel sprouts, trimmed and halved lengthwise
2 apples cored and sliced (I used gala the original recipe asked for Fuji or Brae burn)
2 tablespoons of olive oil
salt and pepper to taste
Taste of home's Spinach herb mix to taste
1/4 cup of cranberries
1/2 cup of chopped walnuts
2 tablespoons maple syrup
1. Preheat oven to 400 degrees
2. Toss brussels sprouts and apple slices with olive oil, salt, pepper, and spinach herb mix in a big mixing bowl. Line on a baking sheet. Bake for 30 minutes stirring halfway through cooking time. Cook until the brussel sprouts are tender and browned.
3. Transfer roasted mixture to a big bowl (I used the same one from step 2). Stir in cranberries, walnuts, and maple syrup.
