What Meal Prep looks like.

This is what a good meal prep looks like. The top of the tower is a red apple for a snack. Then my "Holy Sweet Balls, Batman!" that I made on Sunday. The recipe is posted here. The red contianer is filled with this sunday's meal prep "Grilled Spicy Zucchini". You can find the recipe here. Which can be eaten hot or cold and since I ate it hot yesterday today it will be cold and on top of a bed of fresh spinach from my garden. I just made this prep into an amazing salad!

I also make a green smoothie every morning for breakfst. This is today's smoothie which the recipe will be posted after this blog post!

My Smoothie Drinking Her-story

Screw History (His-story) this is my Hertory (Her-story).
This is a post that really is meant for chitter and chatter. It is more like the her-story of my smoothie drinking life. Do you still want to continue?

Once upon a time I made a huge move all by my lonesome to the great big state of Texas (which is not bigger than the state of ALASKA (just saying)). I was following a boy that I met after my second deployment. He was, or I thought he was, the best man for me. He wasn't. I am getting a divorce. Long story short:

While I lived in Texas I found it hard to make friends or just have a good friendship with someone. So I went onto Craigslist.org to look for platonic friends. Who would have thought that I meant the most amazing woman that still holds a special part of my heart. When we first met I thought she was so out there with her vegan, vegetarian, raw, smoothie ways. Her youngest child at the time was stark naked and later became my girlfriend just like her mother had become in my life. She taught me things about food I never knew before and allowed me to stay with her for like 2 or 3 months in her home while her husband deployed. It felt like forever. She was one that introduced me to the Vitamix.
Every morning before work we made smoothies and went for our morning runs. When I moved out I was saddened because I didn't have a vitamix (I also didn't have my red-headed hippie friend either) so I had to replace it with a crappy blender and a juicer. Gross. I searched far and wide for a vitamixer on ebay since I was way to cheap to pay $425.00 for a brand new one.
I waited, and waited, and waited. I waited 4 years till I purchased my first ever Vitamixer from ebay. I was so excited because I got if for $170 even though it was used I knew I was going to love it.
I started making smoothies the day the package came in the mail. I was so excited that I went to the store to get some fruits and veggies. Mixed it up in the blender and took my first taste. Let me tell you now, that was one disgusting smoothie. I don't even know what I mixed but I wasn't ready for how green and gross it had tasted. Do you think that put a stop to the smoothie making? Hell NO!
I decided about a week after I got my Vitamix that I would do a smoothie detox. Everyday for a week I drank smoothies for breakfast, snack, lunch, snack, and dinner was well dinner not smoothie. I felt week, tired, grumpy, and in shock. I was shocked how much my body wanted sugars and carbs. Those feelings lasted three days and then after the week of the blessed torture I craved fruits and veggies. Imagine that. After that I read a book about food, and became a clean eating fanatic.
Now clean eating is a different story and this one is about smoothies. I make a breakfast smoothie everyday except Saturdays. That is the day I go to the coffee house and enjoy a hand made breakfast with some hot tea and a good book. It is my alone time. I am thankful for being introduced to the Vitamix and smoothie making. If it wasn't for that I wouldn't be eating the best foods for my body and I would be stuck in sugar/carb hell.
Thanks for reading this super long Her-story of my smoothie drinking/making adventures. I hope you enjoyed it. I hope you read it, if not I hope you enjoyed the pictures.

Skin Healthy Immunie Boosting Smoothie

Yesterday one of my co-workers came in sick and droopy, so I had to make a great smoothie that would combat whatever she left behind in my office. I don't need some stinkin' virus in this body. A clove of garlic was added to give a boost to my immune system. I am a fan of adding garlic or lemons to my smoothies.

What are some weird or unusual food that you mix in your smoothies?

Nutty Sweet Goodness Meal Prep

That is what I am going to call this amazing meal. The original name is actually Roasted Brussels Sprouts and Apples. Sounds a bit boring so I had to of course re-name this.
Ingredients:
1.7 lbs of brussel sprouts, trimmed and halved lengthwise
2 apples cored and sliced (I used gala the original recipe asked for Fuji or Brae burn)
2 tablespoons of olive oil
salt and pepper to taste
Taste of home's Spinach herb mix to taste
1/4 cup of cranberries
1/2 cup of chopped walnuts
2 tablespoons maple syrup

1. Preheat oven to 400 degrees
2. Toss brussels sprouts and apple slices with olive oil, salt, pepper, and spinach herb mix in a big mixing bowl. Line on a baking sheet. Bake for 30 minutes stirring halfway through cooking time. Cook until the brussel sprouts are tender and browned.
3. Transfer roasted mixture to a big bowl (I used the same one from step 2). Stir in cranberries, walnuts, and maple syrup.

ENJOY!

I LOVE PICKLES

I found these pickles at one of favorite stores. I was so happy because they taste amazing and they have 5 whole ingredients or less. Look Ma I am clean eating! After I finish this jar I plan on making my own pickles! Let's see how that works out for me.

Banana Breakfast Cookie

This was one of those recipes that you find roaming its way all around facebook. Your friends and their friends have been re-posting this recipe and yet no one has tried to cook it. I saw this floating around and printed off the recipe. It was perfect timing because I had 3 very ripe bananas and this recipe required just that. I tweaked this recipe like I normally do when it comes to recipe. I added extra cinnamon, vanilla, and almonds. I used rice milk because I didn't have almond milk.

Banana Breakfast Cookies

3 mashed ripe bananas
1/3 cup of apple sauce
2 cuts of oats
1/4 cup of rice milk
1/2 cup raisins (optional)
1/2 cups of chopped almonds (I add this ingredient)
1 1/2 tsp vanilla (I also added the 1/2 tsp)
1 1/2 tsp cinnamon (I also added the extra 1/2 tsp)
1/2 teaspoon of maple syrup (I added this ingredient)

Mix all ingredients together. Bake at 350 for 20 minutes. Let cool on a paper bag.

One of my favorite ways of eating this is warming up oat milk, peanut butter, and a bit of maple syrup. Place 2 cookies in a bowl and pour the warm mixture in bowl. Enjoy. Eat it plain it is awesome.

Green Smoothie Tastes Green

Sometimes I just need more green then anything else. If you make this smoothie be informed that it tastes like greens and almonds. If you want it to be sweeter please add more fruits or less veggies. I now am running high on energy that will last till I crash at 1230am due to Karaoke. I forgot to tell you it's KARAOKE Night. I am so getting me some horribly delicious wings!

Hulk Juice Smoothie:

One Apple
One half Zucchini
two medium Kale leaves
One Bok Choy leaf
1 1/2 cup of frozen Blueberries
1/3 cup of Almonds
1 teaspoon of local Bee Pollen
1 1/2 teaspoon of Vitacost's Whole Food Shake
1 1/2 teaspoons of Chia Seeds
Rice Milk and Water

Chop up Apple, Zucchini, Kale leaves, Bok Choy leaf. Add all the ingredients into your vitamix. Add Rice Milk and water to whatever consistency that you crave. I like mine in between thick and thin. Pour into a mason jar and ENJOY.

I need something sweet and good for my body

I have been feening for something sweet lately and looking at making good for the good alternatives. Today has to be one of the best sweet foods I have made in a while besides those amazing energy balls. This was super easy to make as well. Are you ready for your sweet taste buds to be satisfied?

Easy Now Sweetie:

1 1/3 cups of halved strawberries
1 1/2 tablespoon of ricotta cheese
and 1 teaspoon of maple syrup

Cut the strawberries in half as stated above. Place into a container. Then add the ricotta cheese and maple syrup. I shake the container gentle when the lid was on to mix the ingredients. That's it. Enjoy!
